Everyone loves a bit of Sausage - Right?

Well I know why you clicked on this post - yeah, I see you smiling


But I hate to break the news to you, this is a recipe! - for food!!




Sausage Medley Traybake


Feeds : 4 Time: Apprx. 30mins Difficulty: Easy Peasy

This recipe is sooo easy, it's quick, super tasty and will make everyone happy!


Ingredients

12 Chipolata sausages (I use Co-op sausages, they are also Gluten Free)

6 Thick Sausages (Again I use Co-op and tend to use Caramelised Onion, also Gluten Free)

New Potatoes - halved (Use as many or as little as you like)

2 peppers - cut into chunks (Green & Red - you could use yellow)

1 Courgette - sliced

1 Red onion - sliced, diced (your choice)

Handful of Cherry Tomatoes (optional)

2 garlic cloves - minced

2 tbsp olive oil

a good helping of honey

a heaped teaspoon ish of Wholegrain Mustard



Method

1. Heat oven to 200 degrees / 180 fan / gas 6. Put the sausages, garlic, peppers, courgettes and onions in a large roasting tin. Drizzle with the oil and season well with salt and pepper. Bake for 15 minutes

2. While the sausages are cooking, boil your new potatoes in a pan with water and a pinch of salt. Boil for around 15 Minutes also.

3. While potatoes and sausages are cooking, mix together the honey and the mustard in a separate bowl.

4. Remove roasting tin from the oven and drizzle over the honey mustard and mix well to coat all the sausages and vegetables, place on the tomatoes if using and return to the over for another 15 minutes, or until the vegetables are golden and the sausages cooked.

5. Can substitute new potatoes for mashed potatoes or can be served with corn on the cob!
