Weeknight Chicken Wonder

This Chicken Teriyaki recipe is so quick and easy and the whole family will love it! - well mine do!


The only thing is it may require a trip to your local supermarket for some of the ingredients but trust me it is so worth it - and if you like the recipe, the ingredients will last a couple of other uses too!


If your families anything like mine...sat on the sofa...everyones been at work...normally grumpy and fed up....take one look at each other....."what do you want for tea".....only to reply with...."Oh, I don't know." - (now I know how my mum feels when I used to say it...and she typically replied with "I cant make I don't know). Well I have the answer to spice up your weeknight tea! - (dinner, tea, fruitcake...whatever you want to call it)


Simple. Easy. Lets get to it!


Chicken Teriyaki

Serves: 3-4 Time: 20-30mins Level: easy peasy

Ingredients

3 chicken breasts cut into slices/cubes /chunks - or if you really want to save time, buy the pre cut chicken fillets - this is based on feeding for 3- now add or take given the size of your family or the size of the chicken!

80ml Soy sauce (I use Kikkomen Gluten Free)

60ml Rice Vinegar (you'll find this in the isle where the sushi making kits are and where the chinese pre made sauces are)

1 tsp Sesame oil

as much Honey as you like - the more you add the stickier the sauce - I don't measure this but I'd say about 2-3 Tbsp

2 tsp Ginger - I use the pre crushed stuff you get in a tube (you'll find this with the fresh herbs and garlic)

2 Garlic cloves - crushed or chopped very fine

2 tsp Cornflour

Spring onions - for garnish

Sesame seeds - also for garnish

Green beans/Broccoli - to serve with

Rice - However much you would like - see below for what I use!

Method

1. Add soy sauce, rice vinegar, sesame oil, honey, garlic, ginger puree, and cornflour to a bowl and whisk together until all the cornflour is combine. Set aside

2. Heat a dash of oil in a frying pan on a medium heat, then add the chicken. Cook the chicken until almost cooked through, then add the sauce and let simmer for 10 mins - or until the sauce is of the consistency you like. (just remember that when you take the sauce off the heat, the honey will then make it really sticky!)

3. While the chicken is cooking in the sauce, cook some rice and boil the broccoli and the green beans.

*For the rice, I use a microwave rice cooker - I shall link below for everyone! It is a god send! 1 part rice to 2 part water, shove in the microwave, stick it on for 10 minutes, and BAM Perfect rice E V E R Y T I M E. Mums you are welcome!*

4. Serve all together, and sprinkle with sesame seeds and onions!

5. Voila! yes it is really that simple!

- I also serve with prawn crackers for that extra bit of weeknight naughtiness!

You will honestly wonder why you never had one! For me its a kitchen essential! So easy and you can't go wrong!
